What Is Gala?
Gala is an aspic-like dish made from boiling down calves' feet to extract gelatin. It's seasoned with garlic, salt, and pepper and served chilled.
Ingredients
- Kosher knee bones (1 part bones to 3 parts water)
- Salt and pepper to taste
- Garlic, minced (optional)
Instructions
Step 1: Place bones in pot, cover with water (1:3 ratio). Bring to boil, skim foam.
Step 2: Lower heat to minimum. Simmer overnight 8-12 hours.
Step 3: Add salt, pepper, garlic. Cook 30 more minutes.
Step 4: Strain liquid, cool, refrigerate at least 4 hours until set. Serve chilled with rye bread.
