The "Night Before" Advantage

The secret to this recipe is starting it the night before. By letting the meat slow-cook overnight, the fibers break down beautifully, and the fruit sugars caramelize into a rich, velvety gravy.


Ingredients

  • 1 Satmar Meats K.Y. Beef Minute Roast

  • 1 Large Onion, sliced into rings

  • 1 Parsnip, peeled and halved

  • 1 Small piece of fresh Horseradish (about 1-2 inches, peeled)

  • 1 Orange, sliced

  • 1 Apple, cored and wedged

  • 1 Mango, peeled and sliced

  • 1 Cup Grape Juice (dark or light)

  • Kosher Salt to taste


Instructions

1. Prep the Meat

Begin by washing your K.Y. Beef Minute Roast well under cold water. Pat it dry with paper towels. Season the roast generously on all sides with kosher salt.

2. Layer the Aromatics

Place the sliced onion and the parsnip at the bottom of your crockpot. These will act as a "rack" for the meat, preventing it from sticking and infusing the juices with savory depth.

3. Add the Roast and Fruit

Place the seasoned roast on top of the onions. Arrange the orange slices, apple wedges, and mango pieces around the meat. Drop in the piece of horseradish—this is the "secret ingredient" that adds a subtle heat and cuts through the sweetness of the fruit.

4. The Liquid Gold
